The Southbend 1683868 Thermocouple 18inch sensor is used to monitor and control the temperature in gas-powered appliances, which in this case are Series 1980 ranges. A 20-30 mV output would be produced, and this would act as a better measure whereby the pilot flame would be detected and the gas valve would be either kept open or closed to ensure that it would operate. It is usually fitted in the burner assembly of the system, which facilitates the consistent heating performance and avoids gas flow in the absence of the flame. This element is essential towards effective and better operation of commercial kitchen appliances.
