The Blodgett 83645 Temperature Probe works by having internal sensors to check the amount of heat in the pan cavity and relaying direct thermal data on its dual-lead wiring system. This electrical signal enables the regulation board to control the heating system to ensure that the internal condition is maintained at a constant temperature. The element is fitted into the sidewall of the unit or the back baffle where the sensing tip sticks out right into the airflow of the cooking cavity. This particular thermistor probe is a direct replacement component.
