The Blodgett BL16645 Convection Oven Temperature Probe W/2 Wires works by sensing the amount of heat in the internal cavity and sending an electrical variation of resistance to the control board. This continuous amplification mechanism enables the system to regulate valves to keep the temperature at a certain temperature set by the user. The component is fixed on the inner wall of the side or rear panel of the unit where the sensing bulb sticks out into the airflow to best monitor the thermal conditions. The thermal conditions needed for commercial baking operations are provided by this dual-wire sensor.
