The Blodgett 16645 Convection Oven Temperature Probe works by sensing the amount of heat in the internal cavity, and the change in electrical resistance is sent to the control board via its two-wire lead. This loop enables the system to regulate heating elements or gas valves to keep the system at the desired temperature level that is chosen by the user. The component is mounted directly within the oven chamber and is placed on the side or back wall so that it will sample the airflow properly.
