The Montague 2004-4 Valve Knob 2-1/8" Dia is a control part that is used in controlling the flow of gas in commercial cooking equipment. It is attached to the valve stem and enables the operator to regulate the amount of heat that is produced during operation. This knob is also found on appliances in commercial kitchens where temperature control is a must. In the appliance, it serves as the user interface to the gas valve and converts manual rotation to fine control of the valve positioning to control ignition, flame height, and shut-off operations in the cooking routines.
