The Montague 02002-8 Valve Knob is a 2-1/8-inch-diameter control component used on commercial cooking equipment. It is attached to the valve spindle to enable an operator to control the flow of gas to a burner or heating area. In kitchen applications, a knob is used to light up, turn up, turn down, or turn off the heat on appliances. It is inside the appliance and provides the manual interface between the user and the internal gas valve, converting rotation into fine control of temperature and flame output during cooking.
