The Market Forge 97-5427 Thermostat is an essential replacement component which keep a specific temperature of the steam-jacketed kettle and always achieve the cooking conditions. It does this by maintaining the temperature inside the kettle and controls the heat flow to maintain the contents at a preferable temperature, as high as 350°F. When the temperature is sensed, Single Pole, Single Throw switch either opens or closes the electrical circuit through the thermostat whereas the 24-inch capillary tube can be used to sense heat accurately.
