The Star Mfg 2T-1421B8703 Thermostat with a dial is a temperature control unit, which is calibrated between 200°F and 400°F, with a 3/8" x 5-1/8" sensing element and a 24-inch capillary tube remote sensing. In commercial cooking equipment, it is used to sense the temperature of appliance and relay this information to the control system to control the amount of heat produced. This is fitted in the temperature control circuit of the appliance, and it acts according to what the user sets on the dial to ensure that the range is maintained.
