The Star Mfg 2E-Z21557 Infinite Switch 15 AMP 120V regulates the amount of heat produced by switching electrical power on and off to a heating element at periodic intervals depending on the knob setting. The shaft can be adjusted to alter the internal sequence of contacts and the length of current flow per cycle can be varied to adjust temperature levels. It is attached to the back of the control panel of compatible M-series cooking equipment where it is connected to the control knob assembly and internal wiring to control surface heating components when in operation in commercial kitchen equipment.
