The Southbend 2662A8701 Thermostat is a spare part that is installed in commercial cooking ranges to control the amount of heat in the oven between 150°F and 450°F. It measures the internal temperature using a 48-inch capillary tube and turns on or off the gas or electricity to keep the desired temperature. It is installed in the control system of the range and reacts to the adjustments of the operator via the control knob. In useful kitchen applications, it maintains the constant cooking temperature in baking, and holding, and is usually replaced in maintenance to provide proper temperature control again.
