The Scotsman A38628021 Evaporator System Packout is an assembly replacement part that fits 18-inch modular ice machines. It gives a cold surface on which water is frozen into uniform ice cubes by the circulation of refrigerant in internal channels and water flowing on the plate. The packout is used in commercial kitchens to replace the evaporator that has become scaled, corroded or leaked. It is installed in the refrigeration circuit between the expansion system and compressor and absorbs heat in the incoming water to maintain a steady freeze cycle in order to allow the machine to harvest, release, and refill without affecting the machine.
