The Pitco PTPP10703 Temperature Controller is a system that controls the amount of heat based on the changes in the temperature inside the appliance and vary the output to keep the temperature at the programmed level. It operates on a 24V system, which interacts with attached parts to maintain the operations constant throughout cooking cycles. This controller is mounted in a 3" X 2-1/2" X 1-1/4" box behind the front panel of the unit, which has a 3-1/3" X 1-1/4" face. Its small part enables it to occupy the standard equipment housing and also enables it to maintain uniform temperature.
