The Pitco B3503201-C Flue Weldment SG14R operates by directing the hot gases of combustion in the burner system to the rear of the pan and exhausting them. This is a steel construction that guides the heat flow on the frypot walls to achieve the maximum thermal transfer prior to the air leaving the ventilation stack. This element is mounted at the rear of the unit and is screwed directly to the rear of the skillet and through the top cap. This assembly ensures that the burners have the right amount of airflow and that heat does not build up in the internal cabinet housing by controlling the flow of high-temperature exhaust.
