The Montague 1220-3 Cheesemelter Infrared Burner uses an induction furnace to produce high levels of radiant heat, which is directed down on food surfaces. The gas is passed through the flame ports, where it burns and generates uniform high temperatures that are applicable in melting, browning and finishing dishes. It is installed above the cooking grate in commercial kitchen appliances to add the highest level of warmth to products like sandwiches, casseroles, and plated entrees. Its construction allows it to maintain even distribution of flame, and it is applicable in overhead finishing stations where a lot of upper heat is required.
