The Middleby Marshall 36021 Oven Digital Temperature Control measures the internal climate and uses the heating elements to keep the setpoints programmed. It is mounted in the control enclosure of the oven, where it controls outputs to relays and indicator systems to coordinate their operation. This replacement part will combine with the already installed control circuitry to provide thermal management capabilities again, to maintain a regular cooking cycle and stability in operation. Made to be used in commercial kitchen ovens, it makes sure that there is controlled heating during every cycle.
