The MERRYCHEF PSX284 Convection Motor Assembly for the Brodo E3 is a drive unit for the convection fan in that can maintain a steady airflow of cooking cycles. It is mounted at the back of the cavity and behind a protective casing to spin the impeller so that it can move the heated air evenly across trays in commercial kitchens, cafes and catering locations. The assembly is used for quicker cooking and even browning of food by ensuring the steady flow of air and even distribution of temperature. The Broad convection system has the motor which links the control board to the fan mechanism and translates electrical signals into controlled mechanical rotation to ensure operation.
