The Keating 004341 High-Limit Thermostat 1/4 x4 inch with 30-inch capillary is a spare part that measures the temperature in a fryer. It monitors the temperature of the oil, and switches off the heating component when the temperature is too high to avoid overheating. The thermostat is in touch with the heating surface of the fryer.
