The Imperial 36016 Convection Oven Thermocouple Extension End 48" temperature sensor is installed to measure the heat inside this appliance to check the temperature levels. This is a long thermocouple that detects temperature at the sensing point and sends a proportional signal to the control system of the oven to ensure that the heating cycles are properly controlled. It finds application in commercial appliances where there is a need to have consistent feedback on the internal temperatures in order to maintain consistent cooking conditions across a series of racks.
