The Hobart 19298 Thermostat works by detecting temperature variations through a fluid-filled bulb that expands or contracts to open or close internal contacts. The 3/16-inch by 11-inch bulb with a 36-inch capillary tube is fitted into compatible equipment which is normally placed in the heated chamber or cooking cavity to sense the temperature accurately. The capillary tube links the detecting bulb to the operator body which is fitted in the control panel. It is normally applied in case of maintenance or replacement to provide normal temperature regulation in commercial cooking appliances.
