The Hobart 00-915685 Slicer Sharpener Assembly maintains the cutting edge intact of the blade by using dual-stone technology to grind and hone the edge at the same time. This is a mechanical tool that involves the rotating knife in a sharpening cycle to cut off the burrs and regain a sharp profile. The assembly is attached to the top of the slicer frame. With the addition of this unique part, the equipment can cut cleanly on a variety of meats and cheeses and does not need external sharpening equipment or to manually remove the blade to maintain it.
