The Henny Penny 162059 Drain Pan Cover Assembly works by wrapping the pan of the fryer to assist in the control of grease and food debris as the oil drips off the cooking side. This cover assembly is fitted in compatible EEG16/24X fryer models and is mounted directly over the drain pan area under the cooking vats. The assembly is fitted at the pan edges and mounting points to fit and contain. It is made to resist typical fryer temperatures and repeated cleaning and is typically installed when replacing equipment to ensure that a drain pan is covered precisely in commercial frying equipment.
