The Groen Z000279 Steam Jacketed Kettle Spud Orifice Holder 3/4" is a gas system component fitted to fix and position the burner. It works by keeping the orifice properly aligned in such a way that controlled flow of gases is supplied to the burner when it is operating. In practice, the holder is fitted in the burner assembly of the kettle in the bottom compartment. In the kettle system, it aids in the controlled supply of gas needed to heat the steam jacket to allow normal temperature control in the cooking and holding processes in commercial catering facilities.
