The Garland GL1360200 Thermostat is controlled by measuring temperature variations using a fluid-filled bulb that is expanded or contracted to open or close internal contacts. This mechanical action controls power to heating parts according to chosen temperature levels of 100 to 450°F. The thermostat is mounted in compatible cooking equipment with the 3/16-inch by 9-inch sensing bulb situated in the heated space. It has a capillary tube that links the bulb to the control body that is mounted on the control panel. The thermostat is used as a substitute unit in commercial cooking appliances.
