The Blodgett 57112 Combination Oven Baffle Assembly BX-14 31 6L is a directive of the internal airflow over the heating elements to provide even heating of the cooking chamber. This element acts as a structural resistor that controls velocity convection currents, which prevents hot spots and enables uniform thermal exchange. The assembly is firmly attached to the inside wall of the rear of the unit, and it is directly in front of the blower wheel. The unit is made of 316L stainless steel and has certain hole patterns that are aimed at maximizing the ratio between moisture and dry heat in intensive combination cooking cycles.
