The APW 55564EGO Infinite Switch EGO is a temperature control component that is used in commercial cooking systems. It controls the amount of electrical power flowing to heating elements, and enables the user to control heat production over a continuous range as opposed to predetermined settings. The switch, which is mounted behind the control panel and linked to the thermostat and elements of the appliance, is at the center of controlling the cooking temperature in the system. It is normally fitted at the time of maintenance to resume proper heat control in case the original switch has been worn or failed.
