The Alto-Shaam GS-27127 Oven Door Gasket 10.20/12.18 ESG operates by providing a close mechanical fit of the unit opening frame to the assembly of the exterior entrance to ensure that the thermal energy does not escape. This element makes use of the heat-resistant property to compress itself during the time the door is latched to ensure the internal atmospheric conditions that are required for the same cooking cycles. It is mounted directly around the edges of the oven door assembly and fits in a channel to be completely covered over the opening.
