The Alto-Shaam ALTKN3468 Oven Knob 1-7/8" DIA is a temperature control dial that is installed on commercial cooking equipment to set and indicate the set temperatures. The stepped scale between Off and 350°F to 100°F enables the users to control the amount of heat produced during the food preparation and cooking. It is normally attached, whereby a certain degree of temperature control is in demand.
