The Southbend 3002761 Motor 208/230 V is an electric part that is used to drive the internal air circulation system in compatible combi ovens. It also provides two adjustable speeds that can be used to control airflow when using the various cooking modes, which are used in maintaining a uniform distribution of heat and a uniform cooking outcome. The motor is in the oven housing, and it operates the fan assembly, which circulates hot air within the cooking chamber. It is applied in commercial kitchen settings where specific temperatures are needed and where the performance of the oven must be accurate as part of the entire combi oven system.
